Peas and Green Onion Sabji

Peas(cooked) 1 cup
Spring onions 1 cup
Oil 1/4 cup
Cashewnuts 1/4 cup
Cream 1/4 cup
Garlic 6 flakes
Butter 1 tbsp
Chilli powder 1 1/2 tsp
Salt 1- 1 1/4 tsp
Sugar 1 tsp
Jeera(cumin seeds) 1/2 tsp
Ginger 1 inch
Grind ginger and garlic into a fine paste.
Grind cashewnuts also into a fine paste.
Chop all vegetables .Puree tomatoes and cook peas.
Heat oil in a thick vessel, add jeera. when it splutters add onion and sugar and fry till light brown in color.
Add ginger-garlic paste and fry till the raw smell of garlic disappears.
Add chilli powder and cashewnut paste and two slit green chillies and fry a bit.
Add the pureed tomatoes and fry on a slow flame stirring all the time, till oil floats on top.
Add salt and one cup ofwater little by little simmering all the time till a thick gravy is formed. Add peas.
Heat butter in another pan. Fry capsicum till tender and the green onion leaves . Fry till slightly wilted.
Pour the fried capsicum and spring onion onto the simmering gravy. When the gravy is slightly thick pour in the beaten cream.
Simmer just once and serve hot with any naan.
